Lately, I’ve been making this baked granola for breakfast a lot, so I made a video for it, hoping you might feel inspired to make it too.
This is a basic recipe that you can customize with your favorite ingredients. If you’re serving it to kids, I recommend leaving out the chia seeds.
Ingredients:
- 2 ripe bananas
- 150g rolled oats
- 2 eggs
- 2 tsp chia seeds
- 2 tsp honey
- 2 tbsp shredded coconut
- Optional: cinnamon, vanilla extract
Instructions:
- Mash the bananas with a fork, then add the eggs, rolled oats, chia seeds, honey, shredded coconut, and any optional flavorings like cinnamon or vanilla extract. Mix well.
- Spread the mixture into a greased baking dish or ovenproof dish.
- Bake at 180°C for 20 minutes. After 12-15 minutes, when the top starts to brown, stir the granola to break it into larger chunks, then continue baking until done.
- Cooking time may vary depending on the appliance and the size of the baking dish used.
Serve with plain Greek yogurt, coconut cream, fresh fruits, and a drizzle of honey according to taste.
