Lately, I’ve been eating less meat, but I couldn’t resist this nuggets again. 🙂 The breading is so deliciously crispy, the meat is tender and juicy. This homemade treat is in a league of its own compared to store-bought ones, and I love that it’s super quick to make and there’s no lingering smell of oil. You can also cut thicker chunks, just need to bake a bit longer.
Ingredients:
- 700g chicken breast fillet
- 3 tbsp flour
- 1 tsp smoked paprika
- 3 eggs
- 150g breadcrumbs
- 4 handfuls of cornflakes
- Salt
Instructions:
- Cut the chicken breast into bite-sized pieces and season with salt.
- Mix the flour with smoked paprika. Beat the eggs with a little salt. Crush the cornflakes with your hands, they don’t need to be too finely crushed, then mix them with the breadcrumbs.
- Coat the seasoned chicken pieces with flour, then dip them in the beaten eggs, and finally coat them with the cornflake breadcrumb mixture. Arrange them on the air fryer rack basket. Drizzle with olive oil and bake at 180°C (356°F) for 10-12 minutes.
- Cooking time may vary depending on the air fryer and the thickness of the chicken breast pieces.
